The largest single factor behind today’s higher beef prices is a significant reduction in the U.S. cattle herd. Years of drought have hit key cattle-producing regions hard, reducing the availability of grass and water and forcing many ranchers to downsize their herds. With fewer calves being raised, beef production has dropped to its lowest level in decades.

Because it takes years to rebuild herd numbers, this shortage isn’t something that can be corrected quickly. Even as conditions improve, there’s a long lag between breeding new cattle and getting them to market weight — meaning that supply will likely remain tight for the foreseeable future.

Rising Costs at Every Level

In addition to smaller herds, nearly every cost associated with raising, processing, and delivering beef has increased. Feed, fuel, labor, transportation, and packaging costs have all climbed steadily in recent years. These added expenses ripple through the entire supply chain, leaving ranchers and butchers alike with little room to absorb the difference.

Even in areas like Northern California, where pasture-based operations are common, dry conditions and higher input costs continue to push prices upward.

Strong Consumer Demand

Despite rising prices, Americans haven’t lost their appetite for beef. Consumer demand has remained strong, particularly for high-quality, locally sourced cuts. That continued demand, paired with tight supply, is what keeps prices elevated — and experts expect this dynamic to persist well into 2026.

Even with these efforts, however, the sustained rise in beef prices and production costs has made it impossible to continue absorbing increases indefinitely. For that reason, we will be raising the price of our Meat Boxes for the first time in five years. This change reflects the real cost of producing premium, locally sourced beef while ensuring that our ranchers, employees, and customers all remain part of a sustainable, long-term system.
