Grilled Sausage and Peppers

A straightforward, high-reward meal that works for weeknights or weekends. Good sausage does most of the work — you just need heat and a little patience.
Ingredients

- 4–6 fresh sausages (Italian or house-made)
- 2–3 bell peppers (any color), sliced
- 1 large onion, sliced
- 2–3 cloves garlic, sliced
- Olive oil
- Salt and black pepper
- Optional: red pepper flakes
- Optional: hoagie rolls or crusty bread
Instructions
1. Start the sausages
Preheat your grill to medium heat. Place sausages on the grill and cook slowly, turning occasionally, until browned and cooked through (about 12–15 minutes).
Tip: Don’t rush this — slow cooking keeps them juicy.
2. Cook the peppers and onions
While the sausages cook, heat a pan (or grill-safe skillet) with a little olive oil. Add onions first and cook until they begin to soften. Add peppers and garlic, season with salt and pepper, and cook until tender with a little char.
3. Bring it together
Once sausages are done, you can:
- Slice them and toss into the peppers and onions
or - Serve whole alongside the vegetables
4. Serve
Serve on a plate or load into a roll with the peppers and onions piled on top.
How to Make It Better
- Add a splash of vinegar or squeeze of lemon at the end for balance
- Let the peppers get a little color — don’t stir constantly
- Use a mix of sweet and hot sausage for contrast
